MOLASSES COOKIES - 3 to 4 dozen
1 1/2 cups shortening
2 cups sugar
1/2 cup molasses
2 eggs or 2 eggs worth of Egg Replacer
4 cups flour
2 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 teaspoons ground ginger
Preheat oven to 375.
Mix shortening & sugar together.
Add the rest of the ingredients.
Roll into balls.
Roll the balls in sugar (this is in addition to the one cup of sugar mixed with the shortening). Bake 8 minutes on cookie sheet.
After 8 minutes take out the cookie sheet & bang the pan several times (seriously, bang it down on the counter to flatten the cookie out).
After banging, bake for two more minutes.
Bang them down again and let rest for a few minutes before removing from the cookie sheet.
